ATTA
(1).Atta or resultant atta means the coarse product obtained by milling or grinding clean
                         wheat free from rodent hair and excreta It shall conform to the following 
                         standards:—
                         •Moisture – Not more than 14.0 per cent (when determined by heating at 130-133oC for 2 hours).
                         •Total ash – Not more than 2.0 per cent (on dry weight basis).
                         •Ash insoluble in dilute HCl – Not more than 0.15 percent (on dry weight basis)
                         •Gluten (on dry weight basis) – Not less than 6.0 per cent
                         •Alcoholic acidity (with 90 per cent alcohol) expressed as H2SO4 (on dry weight basis) – 
                         Not more than 0.18 per cent
It shall be free from rodent hair and excreta
(2).Fortified atta means the product obtained by adding one or more of the following materials to 
    atta, namely:—
    •Calcium carbonate (prepared chalk, popularly known as Creta preparata).
    • Iron
    • Thiamine
    • Riboflavin, and
    • Niacin.
The calcium carbonate powder, if added for fortification shall be in such amount that 100 parts by 
weight of fortified atta shall contain not less than 0.30 and not more than 0.35 parts by weight of 
calcium carbonate. It shall be free from Rodent hair and excreta
(3).Protein rich (paushtik) atta means the product obtained by mixing wheat atta with groundnut 
    flour “or soya flour”, or a combination of both”. flour up to an extent of 10.0 per cent.
     Soya flour which is a solvent extracted soya flour used in such mix shall conform to the 
     standards of Soya flour laid down under 2.4.13 (1). It shall be free from insect or fungus 
     infestation, odour and rancid taste. It shall not contain added flavouring and colouring agents
      or any other extraneous matter. It shall conform to the following standards:—
      • Moisture – Not more than 14.0 per cent
      • Total ash – Not more than 2.75 per cent on dry basis.
      • Ash insoluble in dilute HCl – Not more than 0.1 percent on dry basis.
      • Total Protein (N x 6.25) – Not less than 12.5 percent on dry basis
      • Alcoholic acidity (with 90 per cent alcohol) – Not more than 0.12 per cent
It shall be free from Rodent hair and excreta
